Pancakes are one of my favorite breakfast items but regular old flapjacks can get a little boring at times, so I decided to dress mine up a bit. It’s amazing what a little lemon and blueberries can do to such a basic dish. These pancakes are light, fluffy, sweet and tangy. The lemon really kicks it up a notch, I would eat these for breakfast, lunch, or dinner. Add a few roasted walnuts and some powdered sugar and you have yourself a real breakfast of champions!!!!!
All your “not so basic” ingredients.
Juice and zest your lemons then add to the batter.
Fold in your blueberries and you know the rest 🙂
For the pancakes I used this recipe. I added about one cup of fresh blueberries and the zest/juice of two lemons to the batter, then topped them off with more blueberries, toasted walnuts, and powdered sugar.
