S’mores hold a special place in my heart. I remember making them every summer at my grandparents cabin in Iowa. It was so much fun being able to roast your own marshmallow, (which usually resulted in a overdone, often black, gooey mess) devouring ten times my weight in these tasty treats and afterwards running around with sticky fingers and bare feet. Oh the good old days when everything was so simple. 🙂 Even though I didn’t get to sit around a warm campfire to make these, I still enjoyed every minute of it and the brownie part made it even more fun!!!
Preheat oven to 325 degrees F. Coat a 9-by-13-inch pan with cooking spray. For easy removal, line the pan with foil, leaving an overhang, then coat with more cooking spray.
Line the pan with a layer of graham crackers
Melt 2 cups semisweet chocolate chips and 1 stick butter in saucepan over low heat ( you can also use a double boiler or bain marie for this)
Off the heat, whisk in 3/4 cup each light brown sugar and granulated sugar; cool slightly.
Whisk in 4 eggs, one at a time, and 1 teaspoon vanilla.
Stir in 1 cup flour and 1/2 teaspoon salt.
Spread in the pan and bake 35 minutes
Remove from the oven and top with mini marshmallows and chocolate chips
Bake an additional 10 minutes
